As I'm writing this post, this video on Instagram has over 1.1 million views and 23k shares. I get asked a lot about ways to save money and still be healthy and I can't recommend organizing a MEAL PREP SWAP with your friends and fam. This works especially well with moms/dads/families. 

Currently, we are facing ever rising food costs and economic stress is at all time high.  The answer is always in community.

Here's the details of how we planned our Meal Prep Swap:
I invited 3 friends, 2 are nutritionists and the other is an entrepreneur trying to eat healthy to get pregnant.

Here were our requirements:
+ Mostly organic and local if possible
+ No artificial preservatives
+ No processed seed oils
+ No processed table salt, mineral sea salts only
+ Max budget of $50 for 8 servings total
+ Variety of animal proteins

Haley brought the controversial lentil soup with homemade french bread. She just had a baby 5 months ago.

Wendy brought chicken tamales wrapped in banana leaves and black beans and salsa.

Katy used my recipe to make curried chicken lettuce wraps with apples, sunchoke, taragon, dill, and more.

I made pho brisket sandos with Vietnamese herbs, homemade hoisin, homemade 100% wild yeast sourdough bread accompanied with a pho beef au jus to dip the sandwich.

We then split the meals among each other, resulting in 4 different meals of 2 servings each! We now have 8 total meals covered for the week!

UPDATE: As of Nov. 27, it has garnered over 4.5 million views!

 

This saves so much time and money. It's also very fun and inspiring way to keep healthy as it kills the boredom from eating our own foods.

I invited my girlfriends over to divvy the foods in compostable containers (they are leftover from my cafe I closed) and I made some lunch for them. It was some good times and plan to do one this coming Sunday. Stay tuned!
