Curried Chicken Sunchoke Apple Salad

Sunchoke, also known as Jerusalem Artichoke is so good raw!!! Can’t wait for these to grow on my farm. And it’s loaded with prebiotic fiber which is essential in support gut health.

Recipe:

Curried Chicken Taragon Salad:
2 chicken thighs marinated in curry powder
salt and olive oil at 400F for 15-17min
Cut in small pieces

1/2 cup sunchoke
1 green or tart apple
1/2 cup red onion
1/2 cup celery
Lots of dill, tarragon and flat leaf parsley
1/4 cup yogurt
1 tsp curry powder
Salt and pepper
Orange zest
Fresh orange juice
Fresh lemon juice
*Mix all together and enjoy by itself or on lettuce wrap, bread, or crackers

FUN FACT: The name 'Jerusalem artichoke' has no connection to Jerusalem. It's believed it's a mispronunciation of the Italian word 'girasole', meaning 'sunflower' as sunchoke is a species of the sunflower. Actually it blooms beautiful sunflowers and sunchoke is a root, the edible part of the plant.
